The traceability of natural cork stoppers is a key factor in the bottling of wines intended for ageing, as cork is not an inert material but one that can interact with the wine throughout its evolution in the bottle.
This statement is supported by two reference studies:
- Sensory Profile Study of Natural Cork Stoppers for Still Wines, by Jordi Roselló, Miquel Puxeu and Juan-José R. Coque.
- Manual of the Aromatic Profile of Cork, published by the Catalan Cork Institute Foundation.
Both studies demonstrate that natural cork stoppers contain various extractable compounds that may migrate into the wine due to its hydroalcoholic nature. These compounds include aldehydes, alcohols, volatile phenols, terpenes, ketones and other aromatic substances that can contribute notes of vanilla, wood, spices, flowers or fruit, thereby enriching the wine’s sensory profile during bottle ageing.
The research also highlights a significant relationship between the geographical origin of the cork and its aromatic profile. The results suggest that the environmental, genetic and soil-climatic factors characteristic of each region influence the chemical composition of the cork and, consequently, its potential sensory contribution to the wine.
It follows that cork traceability is not only a quality control requirement but also a fundamental element in ensuring the consistency of the final product. If a winery receives a batch of cork stoppers whose traceability has not been rigorously controlled and which contains cork originating from different production areas, differences in the chemical and aromatic composition of the stoppers may occur.
As a result, during bottle ageing, variations in the sensory evolution of the wine may arise, causing bottles from the same bottling batch to develop different aromatic profiles. This lack of uniformity compromises product consistency, particularly in age-worthy wines, where bottle ageing is an essential part of their quality and of the consumer experience.
For this reason, maintaining full traceability of natural cork stoppers—from the cork oak forest of origin through to bottling—helps ensure the uniformity of the wine’s sensory profile, improves reproducibility between bottles and strengthens quality control for wines intended for bottle ageing.
